Recipe: Caprese Salad

Ingredients:

  • Roma Tomatoes
  • Oatly Mozzarella (yay)
  • Sweet Basil
  • Salt & Pepper
  • Extra Virgin Olive Oil
  • Balsamic Vinegar

What do you love about being in the kitchen?

SG: I love food. Period! Not only is there so many delicious foods that exist but it’s a beautiful way to show people you care with hard work and love in every bite.

Step 1: Prep! Wash and patdry both the tomatoes and fresh basil. Set aside. Make sure you set aside a cutting board, chef’s knife, and a serving plate of your choice.

Do you have a favorite meal?

SG: Again, so many delicious foods! It is so hard to pick. Something that’s a go-to that I love to have is a good baked mac and cheese. It’s the ultimate comfort meal!

Step 2: Thinly slice your tomatoes and mozzarella in even slices (about a centimeter thick).

You’ve always been outspoken about mental health. How did you begin this journey? 

SG: I wasn’t always! Like anyone growing up in the public eye, I was very critical of myself. What made me want to speak up is that I realized I was not the only one going through things like anxiety, self doubt, etc. It is so normal.

Step 3: Arrange your serving plate alternating slices of tomato, cheese, and basil. 

How do you create spaces for open conversation?

SG: It took being in safe places with the people that I love for me to open up. This is kind of also why I love cooking. The kitchen with my mom was my safe space! All she had to do is whip up my favorite (again baked mac and cheese) and be there to listen.

Step 4: Lightly salt and pepper the whole dish and finish with a drizzle of olive oil and balsamic vinegar. Serve with a smile!
